India Pavilion Restaurant
India Pavilion opened in Central Square 31 years ago in a former pizzeria. Owner Mohan Singh replaced the giant oven with a traditional clay tandoor oven, custom-made in India, and decorated the walls with handwoven tapestries and images of the Taj Mahal. Singh introduced Cambridge to flavors from his native country in 1979.
Pictures of the restaurant’s early days show diners in bell-bottoms waiting in line to get in, which they are still doing today. They’re not just visiting for the restaurant’s extensive luncheon buffet but for specialty Punjabi delicacies like bhindi bhuna masala (okra cooked with sautéed onions and potatoes) and baingan bhartha (roasted and mashed eggplant with tomatoes, onions bell peppers and peas).
From the original tiny space, the restaurant has steadily expanded and will soon be six stores-wide by the end of November with a continuous basement. It will double the size of its kitchen and boasts two new gas tandoors to help the Singh family bring it’s Royal Bharat Catering business under the same roof.
